Kaneki has not dealt with humans in a long time; he has not been part of the human world for so long. He didn't have to tip-toe around everyone all the time. He is very well aware he is a cannibal and a horrendous monster - Kaneki knows his sins better than anyone - and have someone vague-talking and tip-toeing around the questions they actually wish to answer, rather than straightforwardly state their mind is something that exhausts him.
